The present invention relates to a post-harvest cacao processor system. More particularly, the system relates to an automated device and method for a Multi-Stage Cacao Processor with mucilage extraction, bean fermentation, and drying features of cacao fruit after pod breaking. A multi-stage cacao processor device comprising a frame, a plurality of bearings, a cacao processor assembly, a chamber, a perforated cylinder, a shaft, an air circulator assembly, a water source assembly, an exhaust with a swing-type, a mechanical rotation assembly and a control assembly, said invention is characterized of said cacao processor assembly further comprises a plurality of paddles provided with a perforated hollow rod, a plurality of fins, and said plurality of paddles being provided to enhance the process of cacao beans during mucilage extraction, bean fermentation, and drying with uniform mixing, constant airflow, and water coverage, and reducing viscosity.
