(57) Abstract
(EN) Our invention is the development of durian (Durio zibethinus murr.) seed flour as an additional ingredient in baking cookies mixed with 295 grams of all-purpose flour, 73.75 grams of durian seed flour, 4 grams of baking soda, 2 grams of salt, 200 grams of butter, 100 grams of egg, 225 grams of brown sugar, 160 grams of white sugar, and 6 grams of vanilla extract. The durian seeds were cleaned with 10% NaCl solution, washed, removed the seed coat, sun-dried at 50-60°C, milled, and sifted with number 70 mesh. Durian seeds contain approximately 22.35% amylose, and are also valuable as they can be eaten after boiling or roasting and made into durian flour and chips.
