The formulation consists of 100 g powdered kamias (Averrhoa bilimbi), 0.5 cups powdered mussels, 0.5 cups powdered sweet potato, 1 teaspoon hot pepper, 1 teaspoon black pepper, 1 tablespoon salt, and 1/8 teaspoon monosodium glutamate. The technical problem addressed is the kamias (Averrhoa bilimbi)’s underutilization in functional food products despite their rich phytochemical profile, including antioxidants and antibacterial properties.
